Little Squares of Heaven Brownie Cookies
Flourless brownies are the ultimate treat and you can't get better than those from Little Squares of Heaven.
Based in Aberdeen, Faszillah and her husband who run the company make the most delicious range of brownies including classic walnut, salted caramel and pecan and white chocolate chip which can be found at markets across the city and shire.
Sharing our love for gooey brownies and all things baking, I teamed up with Faszillah to create these fudgey brownie cookies. They're easy to make and as yummy as Little Squares of Heaven's brownies.
Here is what you will need:
1 Cup of Good Quality Dark Chocolate
1 Cup Chocolate Chips (White or Dark)
1 Cup Soft Light Brown Sugar
1 Cup Ground Almonds
1/2 Cup of Butter
2 Tsp Vanilla Extract
Pinch of Salt
Preheat the oven to 160°C
Melt the dark chocolate and butter either in a microwave or on the hob and leave to cool slightly. Set to the side whilst whisking the egg and sugar until the mixture leaves a ribbon trail when the whisk is lifted.
Fold in the melted butter and chocolate mix and add the vanilla extract, ground almonds, chocolate chips and a pinch of salt.
Once well formed, drop around one tablespoon of the mixture onto a baking tray lined with baking paper. Repeat until you have used all of the mix but make sure to leave enough space for the cookies to expand. Bake in the oven for around 10 minutes. Your brownie cookies should be set but still gooey in the middle.
Leave to cool, if you can, before tucking in.
