Summertime Lemon Biscuits

There’s something about lemon that I'm a little obsessed with at the moment. I’ve founded myself baking endless amounts of lemon desserts recently – tarte au citron, lemon drizzle and these lemon biscuits.

I whisked this recipe up one night after work and was pleasantly surprised by the results. The lemon curd I used from local Aberdeen company All About Lemons was the perfect finishing touch.

Here is what you will need:

175g Cold Butter Cut Into Cubes

250g Plain Flour (plus a little extra for dusting)

Pinch of Salt

100g Icing Sugar

Zest of One Lemon Plus 2 Tablespoons of Juice

1 Large Free Range Egg

One Small Jar of Lemon Curd of Your Choice

Using your hands or a food processor, mix together the flour, butter and salt until the mixture resembles fine breadcrumbs. Add the sugar and lemon zest and mix again along with the lemon juice and yolk of one egg. Blend together until a dough forms.

Tip the mixture onto a dusted surface and knead together until you have a small smooth ball of dough. Roll the dough out evenly using a rolling pin and cut into circles using a cookie cutter. Place the discs onto lined baking sheets and repeat until you’ve used up as much of the dough as possible.

Cut a smaller hole in half of the biscuits to create the top layer of the sandwich. Bake in the oven for around 15 minutes, or until slightly golden, before leaving to cool on a wire rack.

Once the biscuits have cooled, add a dollop of lemon curd to the complete discs and top each one with a disc with a hole in the centre. Dust with a little icing sugar and serve with a glass of lemonade on a warm summer’s day.
