GRILLED PEACHES FOR BREAKFAST
My favourite moment of the week is a Saturday morning. I try to get up at a reasonable time, make a nice breakfast and enjoy a slow morning, with a little jazz playing in the background.
We switch between different breakfast options, usually depending on the season or what we're up to the rest of the day, but most recently I've been enjoying a new favourite recipe - grilled peaches.
This recipe is super simple but incredibly impressive, so whether you're enjoying a treat on a Saturday morning yourself or hosting guests give it a go.
Here's what you'll need:
- One can of peach slices
- One fresh loaf of ciabatta
- A small bag of your favourite granola
- Three tablespoons mascarpone
- One teaspoon vanilla essence
- Three tablespoons icing sugar
- A drizzle of maple syrup
Strain the peaches and add to a warm griddle pan. Cook on both sides for around five minutes in total, until lovely and caramelized.
In the meantime, mix together the mascarpone, vanilla essence and icing sugar in a bowl and toast a couple of slices of ciabatta.
Once everything is prepared, place the slices of ciabatta onto a plate and add the grilled peaches. Top with a couple of dollops of the mascarpone mix, a sprinkle of granola and a drizzle of maple syrup. Enjoy with fresh juice, the morning paper and a little background jazz.
