I LOVE the oat and raisin cookies that you can buy from the supermarket, but they're full of refined sugar and nasty additives. I've created my own recipe for gluten free oat cookies which are just as good, healthier and great for if you're gluten intolerant. 

I like making a batch for when we have visitors or for taking to a friend's house as a little thank you for having us. 

Here's what you'll need: 

  • 120g rolled oats
  • 120g gluten free flour 
  • 160g coconut or unrefined sugar
  • 1 tsp baking powder 
  • 150g butter, melted 
  • 1 egg
  • 1 tsp vanilla extract
  • 1 tsp cinnamon
  • 100g of raisins

Preheat the oven to 180°C. Mix all of the ingredients together in a large bowl to form a dough. Roll one tablespoon of dough into a ball and place onto a lined baking tray. Repeat with the rest of the mixture, placing each ball at least 8cm apart. 

Bake in the oven for around 10 minutes until the cookies have a lovely golden sheen. Leave to cool on a cooling rack.
