Valentine's Day is just around the corner and with chocolate and baked goods definitely the way to my loved one's heart, I thought I would make a batch of cookies. 

I was keen to make sure they were gluten free so I could enjoy them just as much as him so I did a little research and made these amazing chocolate chunk cookies. You can add milk, white or dark chocolate or could even add a little orange zest to change things up. 

Here's what you'll need: 

  • 150g butter 
  • 175g coconut sugar or unrefined sugar 
  • 1 egg, beaten
  • 1 tsp vanilla extract
  • 200g gluten free flour 
  • 1 tsp baking powder
  • 150g dark chocolate, broken into chunks 
  • Pinch of salt 

Preheat the over to 160°C and line two baking sheets with baking paper. 

Cream the butter and sugar together before adding the egg and vanilla extract. Mix well. 

Sift in the flour, baking powder and pinch of salt before mixing together until well combined. Add the chocolate chunks and mix again. 

Roll the dough into walnut-sized balls and place each onto a baking tray, about 5cm apart. Bake for around 15 minutes before removing from the oven to cool on a rack. Enjoy with a hot chocolate made from dark chocolate and almond milk.
