German biscuits are my go to. After much consideration I've decided that these jam filled and iced biscuits are the queen of sweet snacks. 

There are many recipes out there for German biscuits, or empire biscuits as they're often known, but nothing beats my Granny Harron's recipe. And now, I'm very pleased to share this simple and quick recipe with you. 

The best thing about these biscuits is that you can dress them up anyway you like. I like adding a bit of colour, but why not try topping them with brightly coloured sprinkles or mixing up the shapes? Can't wait to see what you come up with!

Here's what you will need: 


4oz (110g) plain flour 

2 1/2oz (80g) butter or margarine 

1oz (30g) caster sugar 

Finishing Touches

Strawberry or raspberry jam

4oz (125g) icing sugar 


Preheat the oven to 120Β° C (fan assisted)  

Start by sieving the flour and rubbing in the butter or margarine. Next, add the sugar and knead until the mixture forms a smooth ball which can shaped without crumbling.

Roll out carefully and cut into small rounds or your preferred shape - I like using a heart or star biscuit cutter.  Put the cut out biscuits onto a greased baking sheet and bake in the oven until they're lightly coloured. 

Once cool, make the icing by mixing 15ml water with the icing sugar. Sandwich two biscuits with jam and decorate by smearing with the icing. Pop a glazed cherry on top if you fancy, and you're done!
