For the past month or so I've been following the beautiful blogger Elisabeth & Butter and have become obsessed with her baking pictures. I decided to try out the 'homemade oatmeal cream pie' cookies for myself and they were great. 

This is a slightly adapted recipe which I found worked for me but be sure to check out Elisabeth's blog for yourself, it's full of amazing and beautiful things. 

Here's what you will need to make around 13 sandwich cookies: 

For the Cookies 

4oz of Butter

8oz Light Brown Sugar

8oz Granulated Sugar

3 Large Eggs

1tsp Vanilla Extract 

20oz Plain Flour 

2tsp Baking Powder 

1tsp Cinnamon 

1/2tsp Salt 

16oz Rolled Oats 

For the Buttercream Icing Filling 

2oz Butter

5oz Icing Sugar

Preheat the oven to 170°C and line baking sheets with parchment paper. 

Cream the butter, brown sugar and granulated sugar in a mixing bowl until light and fluffy. Adds the eggs one at a time, beating after each addition, then add the vanilla extract. 

Add the flour, baking powder, cinnamon and salt and beat well. Stir in the oats until well combined. 

Scoop around a tablespoon of the mixture onto a baking sheet and repeat until you've transferred all of the mix. Make sure you leave some space between the cookies as they will spread out as they bake. 

Bake in the oven for around 15 minutes until golden brown. Remove and cool on a rack. 

Whilst the cookies are cooling make your icing by creaming together the butter and icing sugar, adding a little water if needed to loosen up the mix. 

Spread a dollop of icing onto one cookie and place another on top to sandwich. Repeat until each of your cookies has a partner. Enjoy and make sure to show me your successful bakes.
