CHOCOLATE CHIP COOKIES
If there's one thing I like to have stocked up in the house it's cookies. They have to be chocolate chip, not too brittle and not too chewy.
These cookies tick each of those boxes. They're great for a quick snack or a late evening treat when curled up on the couch.
Here's what you'll need:
8oz Salted Butter
8oz Brown Sugar
6oz Granulated Sugar
2 Large Free Range Eggs
2 tsps Vanilla Extract
16oz Plain Flour
1 tsp Baking Powder
24oz Chocolate Chips
Preheat the oven to 190°C and line two baking sheets with parchment paper.
Cream the butter, brown sugar and granulated sugar until a light and fluffy mixture forms. Add the eggs one at a time, beating after each addition, before adding the vanilla extract.
Add the flour and baking powder and mix well. Then add the chocolate chips.
Scoop a large spoonful of the mixture onto the baking sheets and repeat until you've used up all of the cookie dough. I made around 20 cookies from my mix but you can make them big or small depending on quantity preferences. Just remember to leave a few centimeteres apart as the cookies will expand.
Bake in the oven for around 10 minutes before leaving to cool on a rack. Enjoy with ice cream or just on their own. And make sure to show me your successful bakes.
