CARROT, GINGER AND TURMERIC SOUP
Over the past couple of weeks I've been feeling under the weather. Along with many others, I've spent days with a sore head, tucked up in bed, trying to shift an annoying cold.
In an attempt to get rid of the nasty bug I made a pot of carrot, ginger and turmeric soup for for me and my family who were also suffering from illnesses.
Ginger and turmeric are two great ingredients for killing bugs and soup is generally a great thing to eat when you're not feeling quite right.
Here's what you'll need:
- Three carrots, diced
- One white onion
- Three cloves of garlic, minced
- One inch of fresh ginger, grated
- 1 tsp turmeric powder
- 950ml vegetable stock
- A little olive oil
Start by heating a small amount of olive oil to a large pan and adding the onion. Cook for three minutes before adding the garlic, turmeric and ginger. Cook for another minute.
Add the carrot and saute for two minutes before adding the stock. Simmer for around 30 minutes until the carrot is soft.
Using a stick blender, blend the mixture until it's smooth. Serve in bowls with a slice of sourdough bread. You'll feel better in no time!
