Every so often I get a craving for banana bread. I don’t what is it but every once in a while I have this need to bake a batch, much to my colleagues’ approval, and eat a couple of slices. It’s definitely one of my comfort foods.

I’ve trialed a few recipes over the years and although this one is not the healthiest I think it is my favourite.

·         10oz plain flour

·         1 tsp bicarbonate of soda

·         4oz butter, plus extra for greasing

·         8oz brown sugar, plus a little extra for the topping

·         2 free-range eggs

·         4 ripe bananas, mashed

·         85ml milk

·         1 tsp vanilla extract


Preheat the oven to 180C and grease a loaf tin with a little butter.

Start by sifting the flour and bicarbonate of soda into a mixing bowl and set to the side. In a separate bowl, cream together the butter and sugar until it’s light and fluffy.

Add the eggs, bananas, milk and vanilla extract to the butter and sugar mixture and mix again before folding in the flour and bicarbonate of soda.

Pour the mixture into the loaf tin and sprinkle a little brown sugar on top. Place in the oven for around one hour until the cake is well-risen and golden brown.

Remove from the oven and allow to cool on a rack. Serve with a cup of Earl Grey tea and a little butter, marmalade or jam.
