Fajitas are a Friday night favourite in our house and this recipe couldn't be easier. Once you've used this recipe you won't need it again. 

It requires a little bit of juggling to get all of the sides ready so I like to lay out as much as I can in advance. 

The recipe cooks up enough fajitas to serve two - three people, perfect for a casual dinner with friends and a good Friday evening film. 

Here is what you will need: 

Fajita Filling

Three Chicken Breasts - sliced or cubed, whichever you prefer

One Sliced Red Pepper

One Diced White Onion

Half Tin Chopped Tomatoes

Chilli Flakes

Smoked Paprika

Olive Oil 

Sea Salt 

The Sides

Grated Cheddar Cheese 

Sour Cream



One Ripe Avocado

Dash of Lemon Juice

Sea Salt 

Pomegranate Seeds

Heat a large frying pan over a medium / high heat and add a glug of olive oil along with a sprinkle of chilli flakes. Once the pan is hot, add the onion and 1tsp of paprika and fry until soft. 

Next, add the chicken and cook until brown on both sides. Then you can add your chopped tomatoes, red pepper and a good pinch of salt. Allow to cook for around 10 minutes until the chicken is cooked through and the sauce is nice and thick. 

Prepare the guacamole by mashing up an avocado and mix with a little sea salt and lemon juice. Top with pomegranate seeds and serve with your sides. Tuck in and enjoy with your favourite box set.
